Italian Christmas Spice Cake white chocolate mousse & hot chocolate sauce

Italian Christmas Spice Cake

  • 100g mixed raisins soaked in 100ml liqueur
  • 250g plain flour
  • 250g caster sugar
  • 150g ground almonds
  • 2 tablespoons cocoa powder
  • 200g sugar
  • 125g cold diced butter
  • 125ml rapeseed oil
  • 3 eggs
  • 2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1 teaspoon mixed spice
  • ½ teaspoon grated nutmeg

In a food processor with blade, process the flour, almonds, cocoa, sugar and butter until the mixture resembles crumbs.

Whisk the eggs and oil together and mix in with the spices.

The mixture will be quite thick – transfer to a bowl and mix in the raisins and liquid.

Press into a lined 12 inch cake tin and bake for 25 minutes in a preheated 180oc oven.

White chocolate Mousse

  • 250g mascarpone
  • 200ml double cream
  • 100g chopped white chocolate
  • 1 teaspoon vanilla extract

Boil half the cream with the vanilla and add the chocolate.Remove from heat and stir to melt. Cool slightly.

Mix the mascarpone with the remaining cream and then fold in the chocolate mixture.

Hot Chocolate Sauce

  • 200ml double cream
  • 100g dark chocolate chopped
  • 1 dessertspoon honey

Boil the cream and honey.

Add the chocolate.
